  • An emerging star in Burgundy since establishing himself under his own label in 2006 and now one of the most iconic names in Burgundy’s Cote de Beaune. Pierre is meticulous in his approach to all components of winemaking, everything from a specifically designed cork to the precise oak used for barrels are considered. He prides himself on making wine of purity and mineral expression, large oak barrels, long elevage with no lees stirring and carefully selected fruit.

    As with all great producers from Burgundy, Pierre-Yves Colin-Morey wines have become incredibly sought after and rarer as a result. We have been huge fans of this wine throughout the years and have been lucky enough to have cellared a broad range of cuvees from an array of vintages. The offering for this dinner is designed to give you a snapshot of the wine across the board from our back vintage catalog which will showcase side by side wine pairing accompanied with a very carefully considered menu.

  • An evening celebrating the Cooper family with wine from Alan and Nelly Cooper (Cobaw Ridge) and Joshua Cooper.

    Alan and Nelly reign from the high altitude and brisk cool climate of the Macedon Ranges where they first established vines in 1985. Since then we have seen Cobaw Ridge grow into the incredibly well respected and loved winery that it is today creating some of the most pristine and expressive examples of Macedon Ranges wine available. So much so that some of the wine that we will be pouring for this event has become incredibly hard to secure.

    Having winemaker’s as parents, Josh has always been exposed to the craft of winemaking. Josh is clearly well versed in the production of Macedon Ranges wine, his Pinot Noir and Chardonnay are internationally recognised and represented in restaurants from NY to London. He has since expanded his horizons to other cool climate growing areas like the Pyrenees where he is crafting some of the great Cabernets of Victoria. Joshua Cooper is one of Australia’s biggest names in wine right now, being named James Halliday's Best New Winery for 2024 as well as the winner of Gourmet Traveller Wine magazine’s Young Winemaker of the Year 2020.

  • Cappellano, Mascarello and Rinaldi are some of the most revered names in the world of fine wine and most definitely our favorites in the world of Piedmonte. We will be looking at multiple vintages of the famed and unique expressions of Freisa, Dolcetto and Barbera. These are wines that always have and always will grace our list here at Ilaria… when we can get a hold of them!

    The grand finale will feature a comparison of a well cellared, extremely sought after and coveted Barolo release from each producer. Whilst all three producers are traditional in their methods, there are definitely signatures of house style. Help us discover, unpack and discuss these nuances over four courses of Piedmontese cuisine.

    It's rare to discuss Meursault, Gevrey-Chambertin, Chambolle-Musigny, and Nuits-St-Georges without mentioning producers such as Mikulski, Tremblay, Barthod, or Mortet.

    Experience an extraordinary evening of Burgundian wines from these renowned producers, skilfully paired with a four-course menu. Due to the limited availability and exceptional quality of the wines offered, this event is expected to sell out quickly.

  • The Jura is the smallest wine growing region in France and has forever been a favourite of those in the know - including us! It is an extremely rugged and mountainous pocket sandwiched right between Burgundy and the Swiss Alps. This marginal climate produces both vineyards and personalities of vigor and wines of tension and immense concentration. We will be following the traditional customs of the region starting the evening with lean and light reds, followed by textured and opulent whites from 2 exceptional producers.

  • One of the great stories in not just Victorian, but Australian wine history and a triumph of three generations of Middleton’s. Mount Mary was established in 1971 with a singular goal of making world class wines inspired by those of Bordeaux and Burgundy. One can confidently say they have achieved that, some might even say that they have surpassed it. Join us for a special evening with head winemaker Sam Middleton and long time distributor Patrick Walsh as we take a deep dive into multiple vintages of their estate grown and bottled cuvees.

All bookings are allocated a 2 hour sitting, if you require longer please contact the restaurant directly.
